For the New Year's weekend we made a trip up to the winery in beautiful Paso Robles (see picture) to sample our wines' progress. Our 2009 Chardonnay from Santa Barbara is coming along amazingly. Half the wine is currently aging in Hungarian Oak barrels while the other half is in stainless steel tanks on the lees (basically the grape solids and spent yeast cells that fall to the bottom of a white wine after fermentation). We did a blending trial of the two styles of Chardonnay and were very pleased with the progress so far. Our 08' Paso Cabernet is aging in a combination of French and American oak barrels and we sampled a blend of this wine as well and are very excited! Both these wines are on track to be bottled late May or early June. I'll keep you posted on a release date!
