BARREL AGING, THE WAIT BEGINS.........



All of our wine made this year has been transferred to barrels for aging. In addition we purchased an 08' Cabernet from the Dry Creek Ranch in Paso Robles that is currently aging in a combination of French and American oak barrels. This wine is already showing wonderful balance and complex flavors and will only get better as the barrel aging continues. We decided to do a combination of stainless steel aging for our 09' Chardonnay to maintain a crisp refreshing mouthfeel as well as age it in Hungarian Oak barrels to impart rich oak flavors. Our 09' Cabernet from Paso Robles will continue to age for the next 12-18 months in French Oak Barrels and will most likely be released spring 2011. We will be doing several barrel samplings over the next year and will keep you posted on the wines development. We anticipate our 08' Cab and 09' Chardonnay being ready for bottling next summer with a fall 2010 release!
