February Update

I made a trip to the Winery this week to rack our wines. Racking is the process of removing wine from the barrels for a short period of time and cleaning out the barrels to remove sediment. This results in a cleaner better tasting wine. We usually rack our wines at least twice during the aging process, more, if extended aging is desired. At completion of the work I sampled the 08' Cab blended together from the different type of oak barrels and was very pleased. It presents with dark fruit flavors, mild spice, vanilla, and complex oak flavors with a well rounded mouthfeel and nice tannins. Pre-release sale of this wine coming soon!
