2011 Cabernet Barreling

We barreled down our 2011 Cabernet after fermentation was complete and the grapes were pressed off.  The fruit looked amazing this year and is some of the best The Crush has seen from the Dry Creek Ranch Vineyard.  We will be aging this Cabernet in French oak barrels for 20-24 months before bottling with a release date some time late 2013.  In the meantime, we have some new wines that will be coming out in 2012 that we are very excited about. Our 2010 Pinot Noir from Paso and a 2010 Syrah from the Dry Creek Ranch Vineyard in Paso.  More news to come on these new wines as we get ready to design the labels, select bottles, corks and complete the bottling process.  Here are some pics of our barreling on November 8th, 2011:
